Japanese sweets-making at Kagetsudou

For this activity, we went to a Japanese sweets shop. 

 

This shop only sells products made the same day, which guarantees that each product is very fresh! In the kitchen, the manager taught us the different steps involved in making "manjū".


These sweets are meticulously crafted to resemble real fruit or objects. 

After following the chef's explanations to the letter, I managed to make my own "manjū"! Wrapping is a stressful step. It involves placing a ball of white anko (bean paste) inside the "koshian", a more elastic paste that can be shaped without tearing. Once the anko is enveloped inside the koshian, the manjū is placed in a cherry wood mould, which gives it its final shape.



Those who love pastries and confectionery might be particularly interested in this experience. Learning to make manjū under the guidance of a local expert offers a very interesting cultural immersion.
